My Story

Working in hospitals is what inspired me to study holistic nutrition. On many occasions I saw patients ask their doctors for dietary advice. What could they change about the way they ate to get better, and prevent coming back to the hospital in the future?

The recommendations doctors gave were inconsistent, ranging from dismissive remarks like "diet doesn't matter" to vague suggestions like "just eat healthy and stress less", to sales pitches like "you should really go keto!”.
​
The advice was as varied as the practitioners, even for patients with the same health condition! This got me wondering, how can these contradictory recommendations be true?
​
What I learned is that doctors get less than 25 hours of education in nutrition. Beyond this, each doctor knows only as much as they personally research on their downtime -which can be a lot, or almost nothing. Nutrition is not their expertise.
​
What truly concerned me was the level of trust patients placed in these recommendations. I realized that this was a huge area of need in the healthcare system, and felt a responsibility to learn and contribute.
​
It was clear that patients required, at the very least, guidance that wouldn't harm their health, and at best, advice that could turn their illness around. To do this right, the job required someone with an understanding of both medicine and nutrition.
So here I am today, as a nurse and nutritionist, with a mission to fill that need.
Why Vegan in the Van?
I founded Vegan in the Van to demonstrate that building a health-promoting plant-based diet is not only simple but can be achieved from anywhere – even from a van!
You don't need fancy kitchen equipment, a larger budget, or an abundance of time;
all it takes is a bit of knowledge and a plan.

As an advocate for plant-based nutrition, my recommendations will always lean towards a plant-centric approach. However, I enjoy working with individuals of all dietary preferences.
